Green Ridge Turkey Farm began in 1931 when George and Grace Kimball bought a 200-acre property on the Daniel Webster Highway and opened a farm stand; the manor house on the land dated back to a Revolutionary-era stagecoach inn. By 1940, the Kimballs had built a small restaurant to serve their own farm-fresh turkeys, sold "drawn and ready for the oven" or "cooked and pan-roasted" with homemade dressing and gravy, and the farm grew to raise as many as 6,000 turkeys at a time. The Charpentier brothers purchased the restaurant in 1954, expanding the menu with lobster, clams, and scallops while turkey remained the star. A giant turkey sign presiding over the restaurant became a beloved local landmark in its own right. The building stood for nearly 60 years before being razed in the 1990s and replaced by a Barnes & Noble — but longtime New Englanders still reminisce fondly about their turkey dinners there today.
