By 1940, the Kimballs had built a small restaurant to serve their own farm-fresh turkeys, sold \"drawn and ready for the oven\" or \"cooked and pan-roasted\" with homemade dressing and gravy, and the farm grew to raise as many as 6,000 turkeys at a time. The Charpentier brothers purchased the restaurant in 1954, expanding the menu with lobster, clams, and scallops while turkey remained the star. A giant turkey sign presiding over the restaurant became a beloved local landmark in its own right.
